Black Lentil Burgers
What I used: 1/2 cup uncooked black lentils, 1 egg, 1/3 cup whole wheat breadcrumbs, red pepper flakes, sea salt, and ground pepper to taste.
How I made it: I cooked and drained the black lentils. Next I mashed them a little with a spoon and stirred in the egg, bread crumbs, red pepper flakes, sea salt, and ground pepper. Then I cooked them over medium-high heat on a greased pancake griddle. Served with red chard, avocado, tomato slices, and tzatziki.

Preheated the oven to 400, then put in halved pieces of ciabatta for a couple minutes. I cooked the red chard in a pan (first the stem, then the leaf part) while the ciabatta was toasting. Then I took the ciabatta out and added the pesto, chard, vegan pepperoni slices, and provolone cheese. I put it back in the oven for about 10 minutes.
